The first time I tried goose was in Kansas hunting with my ex boyfriend. He was a great cook normally, but, the dogs would not even eat this goose!(not a joke) Then I tried it one other time and it was great. Made some goose jerky about a month ago also and it was almost better than venison. My buddy gave me a Canadian Goose that he had marinated and smoked for I think 4 hours. I set the oven at 325 and basted the goose with butter and honey mixture, then put some pinapple slices over the top of it and covered it with foil. Every 20 minutes basting it with the butter and honey mixture and covering back up. Cook for 2 hours. OMG!!!!!! Hold on taste buds! This was an award winning goose! So tender and moist, the flavors were unbelievable. I think one must be careful when smoking not to over do it. Not much experience here.....
