Easiest way to breast a duck??

The way I've been doing it the past couple years was the method where you peel the skin away from the breast, and just cut them out, leaving the feathers attached to the skin. Much like this: Then I figured I could apply the way I breast out doves to ducks, again, much like this.. However, a buddy of mine told me about the "foot stand/wing pull" method that he has used, and comes out much better/easier: http://youtube.com/watch?v=070QheWDCcMMy problem is whenever I've tried doing this, I end up with two feet pulled out and stuck under my feet, with a footless body in my hands. Anyone do it this way to their ducks? or what is your "method of choice"? :rofl2:

We have a small hotwater heater with wax and water. clip wings and feet, then pic a few feathers off. Hold by head and dunk in hot wax/water, then scrape off excess wax and hang, then spray with water. After it cools 1/2 hr or so you peel the wax w/feathers (like a orange) then gut, rinse and hang to drain. Remember to transport waterfowl it must have a wing or head attached for ID, so if you breast out in the field you must leave one or the other attached which is difficult to do.

I usually breast like in the top video, then this year I did the second method on teal, it was very easy. The third method I've only tried on a coot we shot just to taste and the method did not work at all...we had the opposite, no wings and feet still on the bird. Apparently you have to do it IMMEDIATELY after killing.

I used this on my pheasants last weekend, worked really good i was shocked left the breast perfect to fillet off the bone if u want..

The third method only works on coots as far as I know. I have tried it on one coot that a buddy shot and it worked just like the video it was pretty cool. the best way for ducks it to pluck it first, leave the skin on, using a sharp knife start along the breast bone and follow the outside of the chest cavity until you hit the joint where the leg hits the body, snap that joint with your fingers and separate it with the knife. the breast and leg all come off in one piece. break and separate the other leg joint and once you've done that to both sides you have all of the useable meat off or the bird.

Yeah, no kidding SJ, I've found all the hard ways to do it. Looks like something to tinker around with out in the shop.
