As this is my first year hunting big game in California, never had to have a good butcher before. Need someone near LA County that does good work with bear and deer. Want the bear in sausage and peppersticks. Might turn the backstrap into steaks. Venison - jerky, steaks, ground, etc... Making my mouth water just thinking about this. Open to suggestions!Darren

Took my doe and last years buck to Red and White in Oceanside off of Vista Way. They did a great job on my deer last year.

I have to give a thumbs up to Freedom Meat Lockers. When I dropped off my pig they had 5 others hanging in their cooler. The sausage they made was fantastic. But, when they charged me $2.00 a pound for processing (I got 140 pounds of sausage & one of the hams whole) I decided to learn how to do it myself. Turns out its not that hard, in fact its very easy to process your own meat. Step 1 was getting a food processor. I bought a Kitchenaid Artisan with a meat grinder accessory & a sausage stuffer. The next step was just viewing Youtube. As for sausage recipes, there are thousands you can find on the internet (this generation has it soooooooo easy). When I started hunting (early '70's) meat processing was left to the experts, because we (the layman) thought there was some magical process that had to be followed. Today I can watch several Youtube demonstrations. I just wish the game was as cooperative today as it was in the '70's. Hunting is getting harder.

Fryer's meat processing in Pearblossom is great also. I take elk there for sausage.

For me I will never trust any butcher with my game. Recently a friend took a forkie and received about 35 lbs of meat. When he asked where were the backstraps the butcher said "they were all blood-shot". My friend hit squarely in the boilerroom but the butcher wasn't budging. Guess he enjoyed the backstraps.
