I defrostd some venison loin a buddy gave me and I've had it marinating in a light saline and spice solution since breakfast. I'm going to try BBQ'ing one steak for lunch, and the other three for dinner. Any suggestions before I start? I can BBQ steak and chicken pretty tastey, but I've never tried deer. I'll be using mesquite briquetts.

Just be mindful that venison doesn't have the fat that beef does. So it can dry out pretty easily and be somewhat tougher.

The more rare the better! It's good stuff! I really like smoked deer and elk as well.

To keep it moist you can wrap bacon around it or wrap it in tinfoil.. then just before its done flame it real good to make a nice crust
Or do as above and cook it rare

I justed cooked it low and slow, turned out pretty good. But the big drumbstick slathered in BBQ sauce was a lot better!
