Got me one today, the wife pleaded with me to bring one home so I did. I butchered it up cooking the straps and hind legs now we will see if she regrets asking for it lol. I just put on salt and pepper and grilling in a cast iron skillet with pork fat

sooo, what is your verdict? I didn't mind mine, mainly because it tasted alot like liver.

That is a good sign for sure. Check with the farmers in your area. There are a lot of rabbits around so it's jut a matter of getting permission to take them.

I usually Stew Jacks as they are a little tougher than cotton tails, or I cook them low'n'slow on the bbq. I prefer the cotton tails, but eat Jacks also, they both taste just fine! My fave for the cotton tails is to cook them like chicken parm, I get great results, and the sauce turns out killer too! I always cook from scratch, it's not that hard, especially marinara sauce. I caught my Mom eating just the sauce with a spoon out of the fridge last time I made wabbit parm... I guess I did alright cuz Mom's an amazing cook! Learn from the best. ;)

Man, I just cant bring Myself to eating one... but now that the Libs have re-elected old Bat ears... it may prove to be a main staple! lol

I give the jacks I shoot to a friend. He uses them for bobcat bait in his traps, last year he trapped 80 plus bobcats in Modoc and Lassen counties. Lol he also caught a young lion, had a hell of a time getting it out of the trap. Ed
