Like TonyS mentioned, you have to cook jack rabbits slow and on low heat. I cook mine in the crock pot.
Jack rabbit meat is more like beef in color and texture. The flavor if marinated is not unlike beef, but clearly not the same because of what the jack rabbit eats and also because of the jack rabbit's low fat content in the meat. From posts I've read, you either like it or you don't. I actually like it when I take time to prepare it correctly. I've also just seasoned the back straps and cooked them in the pan to taste what the meat tastes like before I come up with recipes to use on it. It can have a very gamey taste.
