Broiled Trout fillets

Fillet trout out . Put just a little olive oil in pan to keep fillets from sticking. Lay fillets in pan skin side down . Brush with butter or olive oil seasoning salt your maybe some parsly. broil till you like them I like them just starting to brown . When cooked brush some more butter or oil on them.Picture020.jpg

When I do this I line the pan with tin foil, as you have, but I don't brush it with oil. I want the skin to stick. When the fish is cooked you can remove the fillet from the skin which stays in the pan. I like to season the fish with lemon pepper.

That looks like great eating. Big trout!!Short story..... When in the service, at noon we could go to this little pond on base and fish for trout. My friend caught a very small trout, and I said, "You going to keep that? It ain't even pan size." He stated back rather calmly, "I have a very small pan." He kept the fish.
