Jack Rabbit Birria

I had a bunch of front legs of some jack rabbits frozen in some brine. I had used to much salt in the brine so I decided to put them in a pressure cooker with some apple cider vinegar, peppercorns, apple cider and coriander seeds. I cooked it at 15psi for about 20 minutes till the meat could be pulled off and shredded with a fork. I removed the spices from the meat and shredded it.

I then warmed up some birria that I had previously made and slow cooked the shredded jack rabbit in the birria till it was nice and warm. Serve with some rice and green beans.

To make the birria.

Take a large bag of dried California Chiles.

Stem the chiles and then remove the seeds.

Soak the chiles in enough water to cover them and start to boil them with garlic till they are soft and tender.

Add the whole contents of the pot to the blender and blend till it is very fine and smooth.

Be careful when blending hot items as the top can blow and cause severe burns.

After the chiles are a smooth puree I add the puree back into the boiling pot on some olive oil and then add oregano, salt, pepper and piloncillo or brown sugar to taste and continue boiling.

I then cook it down till its the right taste and consistency.

If you like it spicier you can add some hot sauce.

Then cook which ever meat you like in it to impart flavor.

Nice, I have been meaning to look up a good Birria recipe. I may be coming up on some goat meat, but that sounds like a good use for Jacks too.

If your in the mood for goat meat check out 99 ranch or Super Kings markets. They usually have goat meat for a decent price and you don't have to butcher an entire goat.

Birria works well for Jacks since they have a stronger flavor although different then goat.

OH Bullseye you making me hungry.

My wife makes the best Birria ever but never thought about making it out of jack. You just gave me a good idea.

A coworker that's original from Southern Mexico says they cook rabbits on Mole sauce. I been meaning to do that but haven't had time to get some rabbits.
